媽媽私房研究【金瓜鹹蛋蝦 Golden Pumpkin Prawns】
材料:

1) 中蝦 300g(去殼,留尾)
2) 南瓜 150g(蒸熟,壓爛)
3) 鹹蛋黃 3粒(蒸軟,壓蘭)
4) 炸油 1杯
5) 牛油 2大匙
6) 蒜茸 1大匙
7) 指天椒 2條(切粒)
做法:
1) 燒熱炸油,分3次放入蝦炸熟,撈起瀝幹油分。
2) 熱溶牛油,爆香蒜茸,放入南瓜和鹹蛋黃炒香。
3) 最後加入蝦和指天椒炒勻,便可盛起享用。
Golden Pumpkin Prawns
Ingredient:

1) 300g medium-sized prawns, shelled but leave the tail
2) 150g pumpkin, steamed and mashed
3) 3 salted egg yolks, steamed and mashed
4) 1 cup oil for deep-frying
5) 2 tbsp butter
6) 1 tbsp chopped garlic
7) 2 chilly padi, sliced
Method:
1) Heat up oil for deep-frying, deep-fry prawns in 3 batches until cooked. Dish and drain.

2) Melt butter in a wok and saute chopped garlic until aromatic. Add mashed pumpkin, salted egg yolk and stir-fry until fragrant.
3) Lastly add prawns, chilly padi and stir well. Dish up and serve.
